Sencha
is a type of decoct Japanese green tea, most popular tea in Japan, made from the dried tea leaves without grinding the tea leaves. It volatile compounds could be used as markers for the overall quality evaluation of all green teas.
In an evaluation of the sensory quality ranking of Japanese green tea (Sen-cha) to identify the various odor-active compounds, including geraniol, indole, linalool, cis-jasmone, dihydroactinidiolide, 6-chloroindole, methyl jasmonate, coumarin, trans-geranylacetone, linalool oxides, 5,6-epoxy-β-ionone, phytol, and phenylethyl alcoholand predicted using volatile profiling and multivariate data analyses of a study of "Predication of Japanese green tea (Sen-cha) ranking by volatile profiling using gas chromatography mass spectrometry and multivariate analysis" by Jumtee K, Komura H, Bamba T, Fukusaki E.[1], researchers found that the whole fingerprints of these volatile compounds could be possible markers for the overall quality evaluation of green tea beverage.

Health Benefits
1. Cardiovascular health
a. Heart health
In the evaluation of Both green and black teas rich dietary sources of flavonoids effect of cardiovascular diseases of the study of "Tea flavonoids and cardiovascular health" by Hodgson JM, Croft KD.[1a], researchers found that benefits of green tea (flavonoids) on body weight and body fatness. Data supporting reduced oxidative damage, inflammation, platelet activation, blood pressure, and risk of type 2 diabetes with tea (flavonoids).

b. Cardiovascular diseases prevention
Green tea and its catechins has exerted the activities of decreasing body weight by interfering within the sympathoadrenal system and fatty acid synthesis, cholesterol absorption and plasma levels and systolic and diastolic blood pressures, enhancing free radical-scavenging activity inhibiting LDL oxidation, inhibiting platelet aggregation and reducing the adhesion molecule expression, according to the study of "[The green tea, a good choice for cardiovascular disease prevention?]. [Article in Spanish]" by Hernández Figueroa TT, Rodríguez-Rodríguez E, Sánchez-Muniz FJ.[1b]

c. Vascular function
Green tea (Camellia sinensis) catechins have demonstrated the effect of maintaining the endothelial function and vascular homeostasis and have associated with the reduction in atherogenesis and CVD risk, according to the study of "Green tea (Camellia sinensis) catechins and vascular function" by Moore RJ, Jackson KG, Minihane AM.[1c]

d. Postprandial lipemia in hypercholesterolemic
In the evaluation of epigallocatechin gallate (EGCG), a chemical compound of Green tea and the reduction of surrogate markers of atherosclerosis and lipid peroxidation, particularly LDL oxidation and malondialdehyde concentrations of the study of "Mechanisms and effects of green tea on cardiovascular health" by Basu A, Lucas EA.[4d], researchers found that effects in attenuating biomarkers of oxidative stress and inflammation among smokers, and an ability to decrease postprandial lipemia in hypercholesterolemic.
